I made her Shiitake and Kale Lasagna with Marinated Dried Tomatoes and Chèvre (wow that’s a mouthful!) on Monday and my husband and I are still dreaming of it. Cheese is a big splurge in our household- so we bought our favorite aged cheddar from Beecher’s and some lovely chèvre. This dish doesn’t use a whole lot of cheese, but using the tangy aged cheddar gave it a big flavor kick. Yum! I’m pretty confident that any given recipe out of this book will leave you feeling the same way.
