Meatless Mondays: Kasha Purifying Soup

After the unavoidable hustle and bustle that is Christmas, a simple hearty soup is just the thing to help you find some inner peace before gearing up for New Year’s Eve at the end of the week. This soup is easy- just throw everything in the pot and let simmer for an hour. Serve with crusty bread or leftover rolls from Christmas dinner and VOILA! you have a simple, but filling dinner. Sit back, relax and let this soup nourish your frazzled nerves.

Kasha Purifying Soup

  • 3 cups Vegetable Stock
  • 2/3 cup Lentils
  • 2/3 cup Yellow Split Peas
  • 1 small Onion, chopped
  • 1 Carrot, peeled & chopped
  • 1 stalk Celery, chopped
  • 1 tsp Paprika
  • 1/2 tsp Pepper
  • 1 clove Garlic, peeled & minced
  • 3-1/2 cups Water
  • 1 tsp Sea Salt
  • 1/8 tsp Thyme
  • 2/3 cup uncooked Organic Kasha

Directions

Wash lentils, split peas and kasha in cold running water and drain. Put them in a 4 quart saucepan. Add all the other ingredients to the saucepan and cook covered over moderately low heat for 1 hour; stirring occasionally, or until lentils, split peas and kasha are soft.

Makes 6 servings.

  1. This is gluten free, correct? I’m used to seeing your product with “Gluten Free” prominently displayed across the top of the label :).
